Ingredients:

1 cup kamut and 1 cup of barely (soaked overnight)

dash of salt

juice from 1 lemon

1/2 tsp cinnamon

3 T maple syrup

2 T coconut sugar

Mix in a food processor, then dehydrate in a pan for approximately 8 hours.

Icing:

1 cup coconut oil

4 T maple syrup

1 tsp vanilla

1 T fresh lemon juice

Mix and add to the dehydrated cake.  I also added lemon balm herb as a garnish.  The cake was chewy and bursting with fresh lemon flavor 🙂
