Ah, smores… nothing can bring you back to those chilly nights by the campfire telling stories with family and friends like these tasty little treats.  The great news is that you can make them totally plant-based and guilt free!  Try this amazing recipe and enjoy the decadence that the plant kingdom has to offer. Mmmm… YUM!

Graham Cookie

Ingredients:

3 1/2 cups whole wheat flour

1/2 cup melted vegan butter

1/2 tsp baking powder

1 1/2 tsp cinnamon

1 tsp nutmeg

1/2 tsp salt

2/3 cup water

2 tsp vanilla extract

1/4 cup agave

1/4 cup maple syrup

+ 2tbsp more of your choice sweetener

2 tbsp flax meal

2 tbsp hot water


{Makes 24 cookies}


Directions:

Mix flax meal and hot water and set aside (egg replacement)

mix dry ingredients

mix wet ingredients

combine the two

let sit at room temp for 30 mn

roll out into a thin sheet and cut into squares or circles

oil a cooking tray and bake at 325* F for 15mn

Melt In Your Mouth Chocolate

Ingredients:

12oz vegan chocolate chips

1/4 cup virgin coconut oil

Directions:

Double boil the chocolate chips and stir until completely melted. Then, stir in the coconut oil.

Peanut Butter Cream

Ingredients:

1/2 packet of silken tofu

8 oz peanut butter

1/4 cup agave

1 tsp vanilla extract

1/4 tsp salt


Directions:

Put the tofu in a food processor or blender until smooth 

then, mix in the rest of the ingredients


{makes a bunch of cream!}


Now, layer the cookies, chocolate and peanut butter cream and vuala! Peanut Butter Cream Smores!
