Just one look at these donuts and our mouths begin to water, our mind wonders what is in these magical little circles? Get your shot of espresso ready and let all your worries melt away because these donuts are RAW, no frying necessary.
These delicious little packets of nutrition are chock-ful of necessary minerals and vitamins because they are 100% plant powered and good for you. The main ingredients in this recipe are Soaked Almonds (or Cashews), Chocolate, Cinnamon and your choice of sweetener (such as Soaked Dates, Coconut Nectar, Maple Syrup or YACON). As we all know chocolate and almonds have pain fighting properties, aka ‘they make you feel good’ particles. Cinnamon is a powerful antioxidant that helps to fight off cancer and it tastes so good in this recipe. As for the sweetener, Dates and Coconut Nectar are very high glycemic and tend to cause a sugar spike, so consider substituting in Yacon instead. Yacon is a pre-biotic sweet syrup, it is lower on the glycemic index and Pre-Biotic means that it helps to absorb more Vitamins and Minerals that our bodies desire – now that is wonderful to hear.
1 cup Pre-Soaked Almonds (or Cashews)
1/2 cup Cacao Powder
2 Tbsp Ground Cinnamon
1/4 cup Sweetner (ei: Soaked dates, Maple Syrup or Yacon Syrup)
1/4 cup Shredded Coconut
- Pre-Soak Almonds for 4-8 hours or Cashews for 1 hour.
- In a blender or food processor combine all ingredient and process for 5 minutes or until a mostly smooth consistency is reached.
- Spoon out a small handful and form into a doughnut shape.
- To decorate donuts, dip them in chia seeds, shredded coconut, cacao powder or any topping of your choice! Don’t be afraid to get creative with melted chocolate, cinnamon glaze or… What have you?
