Made for entertaining a party in your mouth.

Summer is finally here and all the warm weather produce is so delicious.  I love going to the farmer’s market and buying crates of strawberries, cherries, blueberries, raspberries, grapes and all the mouth-watering stone fruit that I can muster to eat.

And on those hot summer days when your mouth is watering for something crisp to eat and satisfy your desire for juicy vegetables, just remember that cucumbers are in season!
 
Ingredients:
Baby Romaine
Cucumber
Summer Squash
Avocado
Tomato
Garlic
Chives
Pre-Soaked Sesame Seeds
 
Drizzle with sauce:
50:50 yacon syrup and Nama Shoyu
 
Directions:
Thoroughly wash lettuce, cut off the stems and lay out individual leaves.  Thinly slice cucumber, squash and avocado. Lay out lettuce leaves, cucumber and squash slices on platters.  We will top these to make individual bites.

Next you can make the tomato garlic salsa; in a blender or food processor combine fresh tomatoes with peeled garlic and blend until smooth.

Finely chop the chives.

Remember that you can pre-soak sesame seeds overnight in filtered water or soak for an hour while preparing the rest of the recipe.

To make a salty sweet sauce combine Yacon Syrup with Nama Shoyu.
 
And it sounds like we are ready to combine all of our ingredients.
 
Top the lettuce, cucumber and squash slices with avocado, salsa and sesame seeds.  Sprinkle chives over everything and drizzle with sauce when you are ready to serve.
