1 large Head of broccoli (cut into really small florets)

3-4 ears of sweet corn (cut corn off the cob)

4 mini cucumbers OR 1 regular size (I prefer English cucumbers because the skin is nicer to eat) diced

2 large avocados cubed

¼ cup or so of raw sunflower seeds

Dash of Cayenne

Sea Salt and Fresh Ground Pepper to taste

Salad Dressing of your choice (I make a balsamic)

The key is to cut/chop/dice everything really small so that with one fork full you get to have all the different tastes and textures in one fabulous bite! So, carefully prep all your ingredients accordingly. Then add one at a time (except the avocado). Mix in the dressing until it’s evenly coated (don’t overdue the dressing). Last, add the cubed avocado. Chill and serve about 30 minutes to an hour later. If you’re preparing the following day – keep avocado whole in the fridge and cut up and add to the dish just before serving. Serve with love.
